Gastronorm Bain Maries

In reality a wet heat bain marie is a gentle heat method for warming and coking a shallow container of delicate food such as sauces, custard, curry over hot water.
The bain marie consister of two conatiners the outer container heats the water to a consistant temperature whilst the inner container (or gastornorm pan) warms and holds food at a serving temperature.
